El Ranch e Roo™ Gorgonzola Salad

–         ¾ cup Mayo

–         ½ cup buttermilk

–         1 rounded tablespoon “El Ranch e Roo” ™ Salad Seasoning

–         1/3 cup crumbled Gorgonzola Cheese

–         8 cups mixed Salad Greens

–         1 cup each of sliced cucumber and red onion

–         6 slices crisp cooked bacon

 

In jar add first 4 ingredients and shake until blended. Put 2 cups salad greens on each of 4 plates. Divide the cucumber & onion evenly between plates. Crumble bacon. Pour dressing over each serving & top with bacon; evenly divided. Yum!    Serves 4

 

Dang, That’s Good™ New Potatoes

–         About 12 to 16 small new potatoes (about 2 cups worth)

–         2 – 3 teaspoons “Dang, That’s Good” ™ Seasoning

–         1/2 cup olive oil

 

Mix “Dang, That’s Good” ™ Seasoning with olive oil and set aside. Put potatoes in pan and add about 1 cup water. Cover and bring to boil. Reduce heat to low and steam cook just until tender. Drain liquid. Add oil and seasoning when potatoes are still hot. Stir and cover. Let sit for about 2 minutes and serve. Serves 3 to 4.

 

Chopped Greek Summer Salad

Combine and shake together well (or pulse in blender):
1 tablespoon red wine vinegar
1/4 cup olive oil
1 tablespoon Grandma Edna’s “It’s Greek to Me” Seasoning

In bowl combine:
2 large tomatoes, seeded and diced OR 1- 1/4 cups plum tomatoes
1 medium green pepper, diced
1 to 2 cucumbers, seeded and diced
2 green onions, chopped
1/2 cup feta cheese, crumbled
1/2 cup chopped kalamata olives

Add dressing, mix and serve.

 

 Marinated Cucumber and Onion Salad

–         ½ large cucumber, peeled and sliced into thin rounds

–         ½ cup red onion (80 grams), sliced very thin

–         3 tablespoons “French Twist” ™ Salad Dressing (made according to package directions)

Mix ingredients together. Allow to sit and marinade for about 30 minutes (or more) in the refrigerator. Serve in small bowl aside your meat or seafood of choice. Serves 1

 

Yummy Asian Salad Dressing

2-3 teaspoons Grandma Edna’s “Amazin Asian” Seasoning

3/4 cup olive oil

1/3 cup rice vinegar

1/3 cup soy sauce

3 tablespoons honey or 4 tablespoons sugar

1/4 cup water

Put all ingredients in pan. Stir to mix and heat until sugar or honey is dissolved. Let cool. Put in container and store in refrigerator. Shake before using. Great on cabbage salad, as a marinade and whatever else you can think to put it on!
